It’s apple pie bar time.

This recipe I’ve been meaning to do once apple season hit. And I’m so glad I did. Because they’re amazing. Easy. And only encourage me to fall more in love with fall baking!

I adapted this recipe for all the apple pie lovers and for those who love themselves a good crumbled topping (ME). These are a simple but beautiful dessert that are just the tastiest things ever.

Best eaten as is or warm with a scoop of ice cream! Yes, Lord.

Apple Pie Crumble Bars

Servings 9

Ingredients

Crust & Toppings

  • 1 1/2 cups all-purpose flour
  • 1/2 cup old-fashioned oats
  • 1 1/2 sticks butter softened
  • 1/3 cup brown sugar
  • 1/2 tsp sals
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1 tsp vanilla

Filling

  • 1 apple sliced very thin (I left skin on)
  • 2 tbsp butter
  • 1 tbsp brown sugar
  • 1/3 cup brown sugar
  • 1 pinch cinnamon

Instructions

  1. Preheat oven to 350F and line a square pan (8x8) with parchment paper.

  2. In electric mixer, add all ingredients for crust/toppings and mix. Ingredients should bind together, still be crumbly, but able to form together when pinched between fingers.

  3. Set aside 1 cup of the crust mixture for your toppings later. In pan lined with parchment paper, add your crust mixture and press firmly with fingers to evenly pack down crust into all areas of pan.

  4. Pre-bake crust in oven for 10 minutes. Remove from oven and let cool for 5 minutes. Arrange apple slices evenly across crust. In a small sauce pan on low heat, melt butter, brown sugar, and pinch of cinnamon together until they have liquefied. Pour filling evenly over apple slices. Crumble the topping you set aside over apple slices and bake for 30 minutes.

  5. Remove from oven and let cool for 5-10 minutes. Carefully use parchment paper edges to lift everything out of the pan and place on cool surface. Cut into bars and eat up. Bars can be store in an airtight container in fridge for several days or wrapped up and stored in freezer for several weeks.
