Summer Blackened Fish Tacos with Pineapple-Lime Slaw
This recipe has it all.
It is flavorful, healthy, filling, refreshing and oh, did I say insanely tasty?!
I was inspired to make these while away for a weekend at the beach with my girl friends and all we ate was fish tacos. I was convinced it was the perfect summer food!
These tacos are super easy to make and a serious crowd pleaser!
I’ve had some amazing fish tacos that are fried, but in this case to make it healthier I chose to bake the fish. And top it with the perfect pineapple slaw that is bursting with juicy Caribbean flavor when paired with the fish seasoning!! Yes laaaard.

- 2 Tilapia Filets
- Mini tortillas
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp oregano
- 1 tsp onion powder
- 1/2 tsp cumin salt
- 1 cup fresh pineapple diced
- 1 1/4 cup cabbage slaw
- 1-2 tbsp chopped cilantro
- 1/2 lime juiced
- splash of water
- 1 tbsp sour cream
- salt to taste
- dash of garlic powder
Add all seasoning ingredients in a small bowl together and sift til well combined.
Preheat oven to 400F for fish.
For slaw-Add all ingredients together in medium bowl (except pineappland mix together til all ingredients are blended and have covered slaw evenly-add pineapple at very end.
Place Tilapia on sheet of foil long enough to cover all of the fish. Sprinkle all of blackened seasoning over fish til evenly coated. Seal fish in foil and place in oven for 12 minutes til fully cooked through.
When fish has cooked, cut into pieces for taco. Wrap fish in tortillas with pineapple-lime slaw over top and enjoy!!
