Easy Jerk Chicken with Pineapple Salsa
Spicy chicken breasts. Sweet’n zesty pineapple salsa. Let’s do this!

I had one spoon full of it and I was diving to the cabinet for tortilla chips. Holy cooowwww! Refreshing and so stinkin’ GOOD. The perfect topping to compliment this simple, spicy, juicy jerk chicken!
This recipe and Fall have nothing in common (CAALEARLY) but I was seriously craving pineapple soooo, you say “spicy chicken and pineapple salsa!” and I say, “why nawt?”
Clearly, me and my food timing is all over the place. Being a fruit lover can do that to expected food vibezzz. But these are nothing but GOOD food vibes.

- 4 boneless skinless chicken breasts
- 2 tbsp olive oil
- 2 tbsp all spice
- 1 tbsp brown sugar
- 1/2 tsp paprika
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cumin
- 1/4 tsp cinnamon
- 1 cup pineapple diced small
- 1 small jalapeno pepper diced small
- 2 tbsp red onion diced
- 1 tbsp fresh cilantro chopped
- salt to taste
Combine jerk seasonings in small bowl and mix. Rub evenly on chicken breasts and place on grill/skillet pan with olive oil on medium heat. Cook each side of chicken for 3-4 minutes or till thoroughly cooked through! Depending on your chicken cuts, time may vary. 🙂
Mix all salsa ingredients in bowl together and spoon over cooked chicken. I served over brown rice and a little lite sour cream drizzled over top!
