Grilled Peach Caprese Salad with Balsamic Reduction
I absolutely LOVE me some caprese salad. Not to mention that I couldn’t wait to do a peach recipe this summer!
Caprese + peaches = hmmm… UH, YEAH.
Alone caprese salad is so flavorful. And so I just wanted to kick things up a notch with some sweetness and added some fresh, juicy grilled peaches.
Drew and I just recently got back from our FIRST wedding anniversary vacation (CRAZY) in Disney World, and it being my first time ever there, It truly was the most magical trip. Lots of tears (of joy) because I’m a huge Disney girl, and many many beautiful memories made. We spent 4 days at Disney, and 2 days of that was at Magic Kingdom. That should say something… From riding dinosaur rides in Animal Kingdom that scared the daylights out of me, to playing magic tricks with Mickey and having THE dinner of my life at Be Our Guest hosted by the Beast himself. STILL in shock. (Currently suffering Disney withdrawl right now. Sigh.)
And if you’ve ever been away, you know it’s usually a vacation from your “diet” and the time to “let it go” (HAD TO). A time to eat whatever you want, right?! Well, I can only do that for a day or two and then I start to deeply crave fruit and vegetables. I’m serious. Carbs don’t help a girl out so much in 100+ degree heat. Oy.
And so on this trip, I craved peaches (and cherries) more than ever before! I needed an escape from the minnie pretzels, donuts and ice cream. Drew can testify. HA. So, for the last few days in Orlando and being home, I’ve been devouring peaches.
To put it politely.
So It only felt right to post a salad we made for dinner and love while using delicious peaches that I love oh-so mucho.
This salad is a favorite because of the simplistic elegance it has! It is so easy and delicious. But it’s also a salad that you so easily make beautiful. You can add it to any date night dinner or throw it together for an unconventional lunch. PLUS, the balsamic reduction is so kickin’ in this salad, I can’t even help myself.
I swear you could drizzle this stuff on anything and it takes it to a whole NUTHA level.
- 2 medium tomatoes, sliced
- 6-8 oz mozzarella cheese, sliced
- handful basil
- choice of greens
- 1 peach, sliced
- 1/3 cup balsamic vinegar
On medium heated grill, cook peach slices for 3 minutes on each side or until slightly charred.
While peaches are grilling, in medium sauce pan bring balsamic vinegar to a simmer on medium heat. Constantly stirring with a metal spoon, let simmer till liquid has turned into a syrupy texture. If it has over cook and is too thick, add a splash of water and stir with the heat.
When peaches have cooked, and balsamic vinegar has reduced, lay greens on plate with mozzarella, tomatoes, basil and grilled peaches. generously drizzle balsamic reduction over salad and optional salt & pepper to taste. ENJOY!
