Sun-dried Tomato Chicken Burger with Greek Yogurt Dill Sauce
Wow. Okay, HI!
Is it just me or is Summer flying by and I’m getting extremely behind…?
Oh, it’s both?! That’s embarrassing. Wow. Well, I guess I should start out by saying I’ve been slacking in the blog world due to constant trips and busy summer activities. (I KNOW, HOW I COULD I DO SUCH A THANG.)
But is that a good excuse? OKAY, GOOD. Thank you.
Well, I should say what has been keeping me this past week was our baby vacation with my family at Cape Henlopen Beach–wait, not that kind of baby. Like a baby vacation. Like a short vaca–uhhh….Better wording next time?!
ANYWHOOO, back to Cape Henlopen–I think I can confidently say it has become one of my favorite local beaches! Less crowds and actually a lot of surfers–HEY, lame east coast girl right here—> I’ve never seen surfing in person so I’m a tad mesmerized by that alone. SRSLY though. But, funny enough–Okay, it’s not funny and you probably aren’t going to laugh–I kept thinking about chicken burgers while I was away at the beach, YA’LL. Who does that, though? You’d think I’d be thinking about seafood after being around the ocean maybe?!?!?!….No, not really. But anyway, back to these chicken burgers—>
I kept seeing chicken burgers on magazine covers and whatnot and It was like they were trying to reach me… (Life of a food blogger, you start to communicate with food. It’s fine.)
And that brings me to here—>This protein packed, EASY, 10 minute meal, topped with a light but creamy yogurt dill sauce. I’m SOLD. I’m not letting summer end before I’m ready! So, until that time I’ll grill. 👊
- 1 lb ground chicken
- 1-2 tbsp sun-dried tomatoes diced fine
- 1/2 tsp black pepper
- 1/2 tbsp paprika
- 1 tsp lemon juice
Yogurt Dill Sauce *optional:
- 1/4 cup yogurt
- 2 tbsp of water
- 1 pinch of dill
- 1 pinch of salt
- 1 pinch of garlic powder
Add ground chicken, sun-dried tomatoes, seasonings and lemon juice into bowl. Mix with hands completely and then form into patties.
Grill chicken burgers for 3-4 minutes on each side. Depending on how big your burgers are they may need a little more time on each.
Yogurt Dill Sauce:
In a small bowl combine all ingredients and mix well. Dollop sauce on burgers and enjoy with a salad!
