15-Minute Vegan Burrito Bowl

Say hello to this healthy, no-fuss meal that takes a mind-blowing 15 minutes to make and is so so delicious. This burrito bowl came about when I had next to nothing in my fridge or pantry, but was still determined to make something delicious out of the little ingredients I had. So I took out a can of black beans, frozen corn, peppers, and Trader Joe’s Green Goddess Dressing. And now here we are. 

This vegan burrito bowl is so easy to make and great for weekly meal prep! 

Ingredients You’ll Need:

This veggie burrito bowl is made with a handful of simple pantry ingredients. Here’s what you’ll need:

  • rice/quinoa
  • black beans
  • peppers
  • corn
  • avocado
  • dressing (I used Trader Joe’s Green Goddess Dressing)
  • paprika
  • cumin
  • chili powder

Best Veggies to Use

Loading up your burrito bowl with vegetables is the best way to get flavor and protein. My favorites to use are sautéed peppers, frozen fire roasted corn, black beans or white beans, and lettuce/greens. Use toppings like chopped tomatoes, avocado slices, and cilantro for flavor. 

How to Make Vegan Burrito Bowls – Step by Step

How to make vegan burrito bowls step by step

  1. Heat up black beans with salt and garlic powder on LOW heat for 4-5 minutes – stir often. 
  2. Saute diced peppers in a medium pan with dash of salt for 3-5 minutes until soft. 
  3. Then add frozen corn and saute for 1-2 additional minutes.
  4. Stir in seasonings with corn and peppers. Then serve peppers, corn, and black beans over rice with sauce, avocado slices, and cilantro.

  • Serve this recipe over brown/white rice or you can also use quinoa for more nutrients and protein. 
  • This recipe is great for meal prep – store in sealed containers and prep for weekly meals. 
  • I used a store-bought goddess dressing from Trader Joe’s to make this recipe super easy. You can use your favorite store-bought Cilantro Lime dressing or make your own

Ingredients

Seasoning

  • 1/2 teaspoon (each) paprika, chili powder, cumin, garlic powder
  • pinch red pepper flakes
  • 1/4 teaspoon black pepper

Instructions

  • Simmer black beans on low in a small sauce pan for 4-5 minutes with 1/4 teaspoon of salt - stir often. 
  • In a pan heat oil on low to medium heat - add diced peppers with 1/4 teaspoon salt - saute for 5 minutes until soft. Add frozen corn, stir and cook for another 2 minutes until corn is cooked. Then add seasonings to peppers and corn. 
  • Serve black beans, corn & peppers over cooked rice with chopped cilantro, avocado, and Green Goddess Dressing.
