5 Ingredient Avocado Coconut Oil Truffles

Ingredients
- 1 ripe avocado
- 4 oz 60% dark baking chocolate
- 2 tbsp cocoa powder split
- 1 tsp vanilla extract
- 1 tbsp melted coconut oil
- unsweetened coconut shreds (optional)
Instructions

Melt chocolate in a microwave safe bowl. In a large bowl mix all of ingredients together - then cover bowl with plastic wrap and chill in refrigerator for 45 minutes.

When batter has chilled, scoop with spoon and roll truffles with hands into individual balls.

For toppings: roll truffles in cocoa powder and coconut shreds. Serve right away and enjoy! Store truffles in refrigerator to keep fresh and chilled.
