Banana Berry Baked Oatmeal
So, a breakfast that looks like a dessert?
That’s kinda what today looks like. And if I haven’t already mentioned, I have a serious thing for breakfast. It is my favorite meal out of the whole day!
This recipe involves a mixture of fresh berries, sweet bananas, almond milk and oats! It seriously SO yum and a recipe that is perfect for brunch or a special breakfast.
It’s also great for a quick breakfast if it’s already in your fridge!
This baked oatmeal is:
1 bowl situation
made with clean ingredients
- 1 banana, sliced
- 1 1/4 cup blueberries
- 1 cup raspberries
- 2 1/2 cup rolled oats GF if needed
- 1 cup almond milk
- 1/4 cup honey can use maple syrup or agave
- 3 tbsp brown sugar
- 3 tbsp quinoa uncooked
- 1 tsp cinnamon
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1/2 tsp salt
Preheat oven to 350F.
In an 8x8 baking dish layer berries on bottom and then banana slices.
In a large mixing bowl sift dry ingredients together (oats, quinoa, salt, baking soda, cinnamon). Once combined, add wet ingredients into dry (almond milk, brown sugar, vanilla, honey).
Consistency of oat mixture should be a little loose due to the almond milk. Lay oat mixture evenly over fruit in baking dish. Spread all the way to the edges of the dish.
Carefully place in oven and bake for 40 minutes. Depending on your type of oven, if it is not golden brown at the top and cooking through the center, you may need to bake for 5 to 10 more minutes. Serve right away as is, or with fresh berries and a splash of almond milk. Preserve leftover in refrigerator. Enjoy! ￼
