Blackened Chicken Rice Bowl with Strawberry-Pineapple Salsa

This recipe is all kinds of flavor bombs. And I have to say, one of my favorite things ever is to eat something with a little spice to it paired with a nice fruity salsa to sweeten your palate with. GUH, it’s my favorite thing. I’m seriously thankful when a recipe like this makes it’s way into my food brain. It’s all the things I love in a beautiful bowl.
I didn’t want to over complicate this recipe though. Sometimes “bowl” recipes can be a little overwhelming when they include a boat load of ingredients. But I found myself coming up with this recipe and feeling like it was a ton less hassle then I thought–and not to mention beautiful, and deeeelish!

- 1 pack boneless-skinless chicken thighs
- 1 tsp salt
- 2 tsp black pepper
- 1 tbsp paprika
- 1 tbsp garlic powder
- 1 tbsp onion powder
- 1 tbsp oregano
- 2 tbsp olive oil
- pinch of cayenne
- fresh cilantro , chopped
- 1 cup strawberries , diced
- 1 cup pineapple , diced
- 1 cup black beans , rinsed
- 1 cup cooked corn
- white/brown rice , cooked
- 1/2 lime wedge
Preheat oven to 375F. Mix blackened seasonings together in a small bowl. Set aside 1 tsp of blackened seasoning for black beans.
In a cast-iron skillet heat oil on medium heat. Generously sprinkle blackened seasoning over both sides of chicken. Cook chicken in pan for 3 minutes on each side, place in oven for 20 minutes or until chicken is cooked through.
While chicken is cooking, mix diced strawberries, pineapple, and 1 tsp cilantro in bowl. Heat up black beans and corn in microwave or stove top. Mix 1 tsp of blackened seasoning with black beans for extra flavor.
Arrange rice, black beans, corn, fruit salsa, and chicken in a bowl. Garnish with some extra cilantro and a splash of lime juice. Eat up!
