Bursting Garlic Tomato Pasta with Fresh Basil
Sometimes the most delicious things are the simplest things.
And it’s about dang time I posted a pasta recipe! This one involves minimal ingredients, less than 30-minutes, and is super flavorful.
It is made with a little parmesan cheese, fresh basil, and garden tomatoes with sea salt and garlic.
I love roasting tomatoes and tossing them with fresh basil and pasta. It’s simple but never lets me down for being completely satisfying and delicious! I make this pasta when I need an extra side or I’m in dire need of comforting pasta.

- 6 oz pasta of choice
- 2 cups cherry tomatoes
- 1 tsp garlic minced
- 1/2 cup parmesan cheese grated
- salt to taste
- 1 tbsp olive oil
- fresh basil
- 1/4 cup pasta water
Preheat oven to 425F.
Toss tomatoes in olive oil with a pinch of salt, 1 tsp minced garlic, and lay on sheet pan. Roast for 10 minutes, gently turn tomatoes and repeat for another 10 minutes.
Follow instructions for pasta on box, When pasta is done strain, carefully preserving about 1/4 cup of pasta water in pot. Place pasta back in pot with left over water. Add parmesan cheese, salt to taste, pinch of garlic powder for flavor. Mix till cheese has melted.
When tomatoes are done, serve on top of pasta with fresh basil and parmesan cheese. Enjoy!
