Okay, you all probably know by now I am a lover of all food. But If I had to narrow down that love a bit to a specific food, Italian takes the cake.

I love it all. Everything from hearty tomato sauce, cheesy pastas, to chicken parmesan. My mom is also the queen of chicken parm and it is literally one of the best things in the world….So this is me trying to subside my cravings for her cooking. ??

This recipe could be one of my favorites and is a healthified spin on a classic! It has everything you could want:

Baked Parmesan Chicken with Zucchini Noodles

Baked Parmesan Chicken with healthy vegetable pasta made from zucchini. A delicious, easy, and healthier version of an Italian classic!

Ingredients

  • 2 zucchinis
  • 4 chicken breasts
  • 4 slices mozzarella
  • tomato sauce
  • 2 Tbsp olive oil
  • 1/2 cup panko bread crumbs
  • 1/4 cup parmesan cheese
  • 1 tsp dried Italian herbs
  • 1/2 tsp garlic powder
  • 1/4 tsp salt & pepper
  • fresh basil

Instructions

  1. Preheat oven to 425F. Toss bread crumbs, parmesan cheese, Italian herbs, garlic powder, and salt & pepper in a shallow dish. Heat oil in a medium sized pan over medium heat.

  2. For chicken: if chicken breasts are on the thicker side, cut in halves and pound them thinner if needed. Lay each side of chicken breast in bread crumb mixture, sprinkling extra over top to make sure they're fully covered. Cook chicken in oiled pan for 3 minutes on each side, or until golden brown.
  3. Bake: Cut zucchini into thin shreds or use a spiralizer. Place zucchini noodles in cast iron skillet and lay chicken on top. Cook for 8 minutes, remove from oven. Spread sauce and mozzarella cheese over chicken and cook for another 5 minutes - I usually broil on HI for the last 1 minutes to get a nice char. Sprinkle with fresh basil, parmesan cheese, and serve!

Notes

You can also serve this dish with other vegetable pasta - like spiralized carrots or beets, or spaghetti squash.

    Oh Bethany!! . . . this was the easiest recipe to make!! And it was absolutely delicious. I made it 2 weeks ago and how wonderful to have something so easy to make (and clean up!) turn out so elegant and delicious. My husband loves chicken parm and he loved this recipe . . . even the ‘noodles’. I have made zucchini noodles before but did not cook them, and he did not like them. Cooking them made all the difference . . . he thought they were great. Definitely a frequent dish in our house from now on! Making Date Night Ravioli tonight . . . which I am sure will be another hit.
