Clean Eating Blueberry Crumble
THE perfect guilt-free, berry-lovers dessert!
Packed with bursting fruit
Naturally sweeten with honey
& insanely delish
I made this recipe a year ago (for last Easter). This year, I tweaked it and made it again for Easter and an evening with my in-laws this week.
I definitely could get used to eating this 2 times a week.
What I love about this recipe is it tastes so natural.
I didn’t add any ingredients to the blueberries, and all clean ingredients to the crumble on top. Thus leaving us with bursting blueberries and a pure tasting crumbly top! AHH-YUM.
This recipe is also super customizable! Add nuts, coconut shreds, or make an easy swap to make it gluten free by changing the oats! Also, ice cream. Don’t. leave out. the ice cream! ?
- 4 cups blueberries frozen or fresh
- 1 cup whole oats gf if needed
- 3/4 cup oat flour
- 1/2 tsp salt
- 1/4 tsp cinnamon
- 1/3 cup coconut oil, melted
- 1/2 cup honey
Preheat oven to 350F.
Make oat flour by adding 3/4 cup whole oats to a blender or food processor, blend until oats have turned into a flour-like consistency.
Mix together oat flour, oats, honey, coconut oil, salt and cinnamon til ingredients have come together.
In an 8x8 inch dish, lay blueberries out. Spread crumble evenly over top of berries and bake for 25-35 minutes. Remove from oven, and let cool for several minutes. Serve warm with dollop of vanilla ice cream.
