Easy Chicken & Vegetable Teriyaki
Has anyone else been dealing with cooking the same ol’, same ol’, for dinner?
Because, I could definitely say “amen, to that”… As much as I love exploring the world of food, I tend to find myself stuck in making the same thing for dinner every week. Usually because the recipe is easy prep and delicious..I guess that means it’s a keeper if I can’t stop, right?! I think so.
As we continue to kick off 2015 and enter into Spring (thank the LAWD) I’m so excited to share with you some yummy recipes that I love and are great go-to’s that can hopefully break the bondage of repeat dinners. 😉 And the best part about them is they are easy as pie. And pie isn’t even easy to make so they’re even easier than that!

Chicken & Vegetables:
- 2 boneless-skinless chicken breast, halved and diced
- 2 heads of broccoli
- 1 red pepper, sliced thin
- 3 medium-sized carrots, peeled and sliced
- 1 can water chestnuts, sliced
- 1 can mushrooms, sliced thin
- 1 minced garlic gloved
- 1/4 tsp ginger
- 2 tbsp olive oil
- 1 cup water
- 1/4 cup soy sauce
- 3 tbsp brown sugar
- 1 tbsp honey
- 2 tbsp cornstarch
- 1/2 tsp ginger
- 1 garlic, finely minced
Chicken & Vegetables:
Place broccoli in pot with 1/4 cup water. Steam for 2-3 minutes.
In medium sauce pan, on medium heat add olive oil and cubed chicken. Cook 4 to 5 minutes, stirring frequently until chicken is no longer pink (cooked through).
Remove chicken from pan when done. In same pan, add peppers, carrots, steamed broccoli, mushrooms and saute for 6 to 8 minutes or until vegetables are tender.
When teriyaki sauce is finished add chicken with veggies, and toss with sauce! We serve ours with fluffy quinoa or sticky brown rice. 🙂
Add all ingredients into pan on medium heat and whisk thoroughly together.
Stir frequently for 4 to 5 minutes until sauce has thickened to your liking. (If your sauce is too thick add water till the desired consistency)
