Has anyone else been dealing with cooking the same ol’, same ol’, for dinner?

Because, I could definitely say “amen, to that”… As much as I love exploring the world of food, I tend to find myself stuck in making the same thing for dinner every week. Usually because the recipe is easy prep and delicious..I guess that means it’s a keeper if I can’t stop, right?! I think so.

As we continue to kick off 2015 and enter into Spring (thank the LAWD) I’m so excited to share with you some yummy recipes that I love and are great go-to’s that can hopefully break the bondage of repeat dinners. 😉 And the best part about them is they are easy as pie. And pie isn’t even easy to make so they’re even easier than that!

If you try this recipe or any other recipe, I would love to hear how you enjoyed it! Review and comment below and let me know your thoughts. Also share your pictures on instagram #asimplepalate - I love seeing your recipe creations! You can also follow me on PINTEREST, INSTAGRAM, and FACEBOOK.

Easy Chicken & Vegetable Teriyaki

Servings 4

Chicken & Vegetables:

  • 2 boneless-skinless chicken breast, halved and diced
  • 2 heads of broccoli
  • 1 red pepper, sliced thin
  • 3 medium-sized carrots, peeled and sliced
  • 1 can water chestnuts, sliced
  • 1 can mushrooms, sliced thin
  • 1 minced garlic gloved
  • 1/4 tsp ginger
  • 2 tbsp olive oil

Teriyaki Sauce:

  • 1 cup water
  • 1/4 cup soy sauce
  • 3 tbsp brown sugar
  • 1 tbsp honey
  • 2 tbsp cornstarch
  • 1/2 tsp ginger
  • 1 garlic, finely minced

Chicken & Vegetables:

  1. Place broccoli in pot with 1/4 cup water. Steam for 2-3 minutes.

  2. In medium sauce pan, on medium heat add olive oil and cubed chicken. Cook 4 to 5 minutes, stirring frequently until chicken is no longer pink (cooked through).

  3. Remove chicken from pan when done. In same pan, add peppers, carrots, steamed broccoli, mushrooms and saute for 6 to 8 minutes or until vegetables are tender.

  4. When teriyaki sauce is finished add chicken with veggies, and toss with sauce! We serve ours with fluffy quinoa or sticky brown rice. 🙂

Teriyaki Sauce:

  1. Add all ingredients into pan on medium heat and whisk thoroughly together.

  2. Stir frequently for 4 to 5 minutes until sauce has thickened to your liking. (If your sauce is too thick add water till the desired consistency)
