Golden Coconut Oil Granola with Dark Chocolate
So, I should start out by saying this was our 2nd batch in 4 days of this stuff. We cannot get enough of it! And who doesn’t love coconut and dark chocolate?! Especially for an ice cream topping. HELLO. Okay, maybe not everyone, but I’m obsessed with both!
Also, let’s just talk about the name for a sec. We used the word “Golden” to describe the granola, because clearly it looks like a beautiful golden brown. AND because we took these photos at the “golden hour” for photography…I’ve been really excited about having more natural light after work to do my photos! (Yay spring!) So my husband and I thought, why not golden hour photos? All I’ll say is he was outside on our front lawn with a reflector while I was inside with the photos…nuff said, right? 😉

- 2 1/2 cups rolled oats
- 3/4 cup unsweetened shredded coconut
- 1/2 cup melted coconut oil
- 1/3 cup honey (you can use agave or maple syrup as well)
- 1 tsp vanilla extract
- 2 tbsp dark chocolate chips
Preheat oven to 350F
In a sauce pan on low to medium heat, add coconut oil, honey (or other sweetener), salt and vanilla. Stir together till melted, then remove from heat.
Combine melted ingredients with coconut shreds and oats in separate bowl, stir till combined.
Spread oats on sheet pan and pop in oven for 10 minutes, stirring oats every 3-4 minutes to avoid burning and making sure every side gets evenly toasted.
Get ready for your house to smell of heaven! When the granola has a nice golden brown toast, remove and let cool for 5-10 minutes, then add your dark chocolate chips! Enjoy!
