And that’s not even the best part! It’s the easy 20-minute preparation from start to finish until you have a healthy, feel-good meal that will satisfy just about anyone.

I’ve been itching to share this recipe since having it for dinner one-no…TWO nights this week! Really. I honestly could say this is one of the best, most refreshing tacos I’ve probably ever had. But you decide for yourself! 🙂

Ingredients

Tacos:

  • 1 pack flour tortillas
  • 3 medium tomatoes from the vine, diced
  • 1 1/2 cup lettuce, arugula, spring mix, etc
  • 1 ripe avocado (1 for avo-sauce)
  • 2 boneless, skinless chicken breasts, halved and cut into cubes
  • 1 lime
  • Fresh cilantro for garnish
  • 1/4 tsp ginger
  • 1 tbsp olive oil

Avocado-Cilantro Sauce:

  • 2 tbsp sour cream
  • 1 avocado, pitted and cubed
  • 1 lime, juiced
  • 1 tbsp chopped fresh cilantro

Taco Seasoning (mixed in a small bowl):

  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp whole wheat flour
  • 1/2 tsp onion powder
  • 1/4 tsp crushed red pepper flakes
  • 1/2 tsp oregano
  • 1/4 tsp black pepper

Instructions

Tacos:

  1. Chop your avocado, cilantro, lettuce, and tomatoes for toppings and set aside.

  2. Using a grill pan/grill or regular sauté pan, bring to medium heat with olive oil.

  3. Roll cubed chicken in homemade taco seasoning (or store-bought)

    Place seasoned chicken cubes in pan/grill, allowing them cook 1-2 minutes on all sides or until cooked through (4-5 minutes).

  4. Place chicken cubes in tortillas with toppings, splash of lime juice + cilantro and that oh-so-creamy avo-sauce!

Avocado Sauce:

  1. Place all ingredients in blender till fully combined and creamy. When tacos are ready drizzle till your hearts-delight!

Recipe Notes

Store avocado sauce in a sealed jar or container and store for up to 2 days.
