Since Drew and I don’t eat a ton of meat throughout the week, we occasionally love to cook up some fresh wild caught salmon and vegetables. It’s a dinner that takes minimal prep work, and is so delicious! I’ve been making this lemony garlic & herb salmon for years. And as simple as it is, I still felt like it’s worth sharing if you are like me and occasionally have those “what do I cook for dinner” funks.
This lemon-y herb salmon could not be more refreshing & simple, I also love being able to cook it in my trusty Lodge cast-iron skillet. My favorite way to serve up this salmon is with roasted/grilled vegetables and rice or quinoa on the side.

Lemon Garlic & Herb Salmon
Delicious & easy Lemon Garlic & Herb Salmon. Wholesome, simple, and the perfect healthy one pan dinner!
Ingredients
- 1 lb Organic Wild Caught Salmon
- 1 tbsp olive oil
- 1/2 tsp garlic powder
- 1/4 tsp lemon zest
- 2 tsp lemon juice
- 1/2 tsp (each) fresh oregano, basil, thyme
- 1/4 tsp salt
- 1/4 tsp black pepper
Instructions

Preheat oven to 375F.

In a small bowl mix olive oil, garlic powder, lemon zest & juice, herbs (basil, thyme, oregano), salt, and black pepper. Place salmon in cast iron skillet and brush with oil & herb mixture.

Bake salmon for 15-20 minutes - or until salmon is cooked through. The time will depend on how thick/thin your cuts of salmon are.

I served this with vegetables, with a side of rice/quinoa. Enjoy!
