Is there anyone who doesn’t love taco’s?!

Any taco that has pineapple, crunchy veggies, and well seasoned protein wrapped in a soft tortilla has my name written alllll over it! I’m so serious.

These taco’s are a new Summer favorite for us. I mean, we just ate these 2 nights in a row–clearly, I ain’t kidding.

We have made several taco recipes on the blog but Drew and I agree these are at the top!

In our kitchen we are all about a little spice and a little sweetness. And this is the perfect combo of both!

Also, I’m ready for Summer and these have me feeling like I’m on a tropical Island sippin’ on a rum swizzle. Yes lawd. That won’t come until August, but these will due until then!

Spicy Chicken Tacos with Pineapple Cucumber Salsa

Servings 4

Ingredients

Spicy Chicken

  • 2-3 boneless chicken breasts
  • 1 tsp chili powder
  • 1/2 tsp garlic powder
  • 1/4 tsp cayenne pepper
  • salt & pepper to taste
  • 1 lime, juiced
  • 1 tbsp olive oil

Toppings

  • 1 handful cilantro
  • 1 lime, sliced
  • 1/2 cup sour cream
  • cabbage slaw
  • 1 1/2 cup fresh pineapple, diced
  • 1 cup cucumber, diced
  • flour tortillas

Instructions

  1. Mix seasoning ingredients together (chili powder, garlic powder, cayenne pepper). Season chicken evenly and add salt and pepper to both sides and juice of one lime. Cook chicken over medium heat in pan with olive oil for 4-5 minutes, or until chicken has cooked all the way through.

  2. For toppings - mix cucumber and pineapple together set aside. Mix sour cream and 1/2 lime juiced together in small bowl.

  3. Slice Chicken thin and add to tortillas with cabbage slaw, pineapple and cucumbers, sour cream and cilantro. Serve right away and ENJOY!
