Summer Pearl Pasta Garden Salad
Say hello to my current favorite salad.
It may not come off on my blog, but I eat a ton of salads. So it’s about time I shared one!
This recipe was inspired by a lunch we had a few weekends ago at a place called Malvern Buttery. I had a salad there that was so simple but I was in love with it. It also had one of my favorite little pasta in it. PEARL PASTA. I had to take some mental notes and then try to recreate it!
This salad is filled with all of the best garden vegetables, slightly crunchy cucumbers, basil, protein-rich pearl pasta, all tossed in a light balsamic dressing.
I am always looking to make simple, easy salads that are loaded with vegetables. This salad is just that and is incredibly satisfying and takes only 15 minutes to make!
CHOP. TOSS. EAT. YUM.
- 1/2 cup uncooked couscous (pearl pasta)
- 2 heirloom tomatoes, diced (I used mix of heirloom and grape)
- 1/2 cucumber, sliced thin
- Mixed greens
- 1 handful fresh basil, chopped
- 1/4 cup balsamic vinegar
- 1/3 cup olive oil
- 2 tbsp honey
- pinch garlic powder
- ping black pepper
Cook pearl pasta according to directions on package with pinch of salt. When cooked, fluff pasta with a fork and let cool on the side.
In a small bowl, whisk together all of dressing ingredients till combined.
In a large bowl add diced tomatoes, thinly sliced cucumbers, basil, greens, and pearl pasta. Add desired amount of dressing and toss salad together until dressing is incorporated. Serve and enjoy! YUM.
