Sauté the diced onion in butter for 3 minutes with a pinch of salt. Then add the garlic and herbs, and sauté for another minute.


Stir in the flour completely with the onions and garlic and cook for 1-2 minutes. add the milk and chicken broth, Then stir in 1 cup of cheddar cheese and 1/4 teaspoon each of salt and black pepper.


Let the sauce cook on a gentle simmer for 2-3 minutes until it thickens quite a bit. Whisk throughout the cooking time.


In a greased casserole dish (9×13 inch), layer the base with thinly sliced potatoes. Sprinkle potatoes with a small pinch of salt & black pepper.


Layer 1/3 of the sauce over the first layer of potatoes, then sprinkle 1/2 cup of cheese over the layer. Repeat layers until finished.


Sprinkle the top with a final layer of cheese. Bake covered with foil for 1 hour, then uncover for 30 minutes.
