This grilled lemon chicken has quickly become a summertime favorite for us. The marinade uses Greek yogurt as a tenderizer, with bright notes from lemon zest and juice, plenty of garlic, and herbs.
Add all of the marinade ingredients into a bowl and whisk together until combined.
Dry the chicken breasts with a paper towel and transfer them to the marinade, coating both sides of the chicken generously in the marinade.
Cover the bowl with plastic wrap and refrigerate for 24 hours.
Grill Chicken
Preheat your grill to 425℉ (medium-high). Cook the chicken for about 5-8 minutes on each side. Internal temp should be around 160℉ when you remove it from the grill. Transfer the chicken onto a clean plate and cover with foil for 8-10 minutes. The chicken continues to cook and should reach 165℉ during this time. Serve after resting and enjoy!

Don't skip resting the chicken - this is key for the chicken to continue to cook to its proper temperature and for the juices to absorb back into the chicken. Leftovers can be kept refrigerated for up to 3-4 days!
