Ingredients
1heirloom tomato, sliced 1/4 inch thick
1cupcherry tomatoes, halved
1peach, sliced
4ozmozzarellaeither use bite-sized mozzarella balls or slices of fresh mozzarella
Slice peaches and tomatoes: slice any large tomatoes into 1/4 inch-thick slices and halve the cherry tomatoes. Carefully cut the peach into slices around the pit.
Arrange salad: on a serving plate, arrange tomatoes, peach slices, mozzarella, and basil. Drizzle with olive oil, balsamic vinegar, and sprinkle salt and black pepper over top. Then serve!
Notes
Balsamic glaze or vinegar - you can use either balsamic glaze which is thicker in consistency and sweeter, less acidic, in taste. Or you can use balsamic vinegar which is tangy and pairs well with a little olive oil to help cut the acidity. Types of mozzarellato use - I used small bite-sized Bocconcini mozzarella, you can also use Perline mozzarella which is a pearl-sized shape. Both are great for salads! You can also use fresh mozzarella slices too.
