Ingredients
Apple Bread
1granny smith apple, (peeled, cored, and diced small)
2Tablespoons butter, melted(I used Earth Balance vegan butter)
Instructions
Preheat oven to 350F.
In a mixing bowl, whisk together dry ingredients (flour, baking soda + powder, salt, 1/2 teaspoon cinnamon, and 1/4 teaspoon nutmeg). Be sure to whisk out any lumps of flour.
In a separate bowl, mix together wet ingredients (eggs, melted butter, coconut sugar, vanilla, and almond milk).
Add dry ingredients and chopped apples to wet ingredients, gently fold together until just combined. Be careful to not over-mix batter.
Line a 9x4 1/2 inch loaf pan with parchment paper and carefully pour batter into pan.
In a small bowl, use a fork to mix together streusel ingredients. Evenly sprinkle over top of batter in loaf pan. Bake uncovered for 50-55 minutes - test with a toothpick to make sure it comes out clean. Let cake cool for 10 minutes before using edges of parchment paper to transfer cake out of pan. Notes
Keep leftover bread fresh by storing in a ziplock bag at room temperature for 3-5 days or chill in fridge to keep extra fresh.Freeze bread by wrapping individual slices in plastic wrap and then storing in a freezer-friendly ziplock bag for 1-2 months. Thaw and reheat in microwave when ready to serve.
